Steak Burrito (Post Workout Meal)
- Half tablespoon of coconut oil
- 225g of steak or lean beef
- 5 spring onions
- 2 tablespoons of seasoning (jerk, peri peri whatever you fancy)
- 100g of pre cooked rice
- 40g of kidney beans
- 2 tablespoons of chopped coriander
- 75g of pineapple
- 1 red chilli
- 1 lime
- Salt and pepper
- 2 large wraps (whole grain)
- Salad leaves of your choice
Melt the coconut oil in a wok over a high heat. Throw in the steak pieces and cook for 1-2 minutes or until brown. Add you spring onions and seasoning and stir in for a further minute or two.
Now add your rice and kidney beans to the wok. Carefully pour in 2 tablespoons of water which will bubble up the steam warming through the rice and beans.
Stir in the ingredients for about 2 mins until the rice is fully warmed through. Turn off the heat and mix in 1 tablespoon of your coriander. Let it rest to one side while you make the salsa.
Grab a small bowl and add in the remaining coriander, pineapple chunks, chili and the juice of half a lime. Sprinkle in some salt and pepper to taste and mix together.
Heat up the tortillas in the microwave for 20-30 seconds
More build your burrito. Start by popping the rice on the tortilla then steak, lettuce, salsa and some more lime juice.
