Prawn and Beansprout Omelette:

- 3 Eggs
- 2 Tablespoons of low sodium soy sauce
- 2 Tablespoons of toasted sesame seed oil
- 1 tablespoon of ground nut oil.
- 200g of cooked prawns
- 30g of bean sprouts
- 1 red chilli
- 20g of finely chopped cashew nuts
- Coriander or herb of choice for garnish.
Crack the three eggs into a mixing bowl. Add soy sauce and sesame seed oil. Beat the
eggs up and sprinkle with pepper.
Pour you ground oil into a small non stick pan. Over a high heat. When the oil is heated through add the eggs and mix around the pan using a plastic spatula. When the eggs start to become a little more firm rather than runny turn the heat down to medium.
Evenly place the Prawns on top of the omelette follow that up with the bean sprouts.
Now, the tricky part. Follow the omelette in have over the filling and let it heat through for about 30-45 seconds.
Gently slide it all onto a plate and top it off with you chilli, nuts and coriander.
